Christmas Pudding Slow Cooker Recipe

Cooking time 7 - 8 hours Slow cooker temperature - high
Serves 6 - 8
If giving as a gift then source some nice jars (you will need one large coffee size jar and a cooking sauce size jar). Layer the ingredients starting with the flour then sugar, spice etc so it looks pretty. Package up your gift as ecologically as possible. Make or print the label below with instructions.
50g/2oz/0.5 cup plain flour 5ml/1 tsp ground mixed spice 100g/4oz/2 cups fresh white breadcrumbs
140g/5oz/1.25 cups shredded vegetable suet
100g/4oz/0.5 cup soft brown sugar 400g/14oz/3 cups dried mixed fruit 50g/2oz/0.5 cup blanched and chopped almonds 1 small carrot or apple, finely grated Finely grated zest and juice from 1 orange 2 eggs—beaten 15ml/1 tbls black treacle 15ml/ 1tbls brandy or sherry 75ml/5 tbls beer or milk A little butter for greasing
Grease a pudding bowl, a size that will fit into your slow cooker. Mix all ingredients together. Fill bowl and cover with greaseproof paper and a layer of foil, tied with string. Put in slow cooker. Fill slow cooker 2/3rd full with water. Cook on high for 10-12 hours, checking halfway through cooking to top up with water if necessary. Cover with fresh foil, leaving the baking paper in place. Keep in a cool place. Eat within 2 months.
